Greek olive oil, the basis of the Greek diet, is considered one of the best in the world.

Olive oil is a liquid fat obtained from olives, a traditional tree crop of the Mediterranean Basin. The oil is produced by pressing whole olives. Its nutritional components play an important role in a healthy living, contributing to a low rate of heart diseases and high life expectancy. It protects against cancer, oxidative stress, blood pressure, diabetes and obesity.

Hippocrates, the first Doctor of Medicine, used the olive oil to cure hundreds of illnesses.

The composition of olive oil varies with the cultivar, altitude, time of harvest and extraction process. It consists mainly of oleic acid (up to 83%), with smaller amounts of other fatty acids including linoleic acid (up to 21%) and palmitic acid (up to 20%).

Extra-virgin olive oil is required to have no more than 0.8% free acidity and is considered to have favorable flavor characteristics; it forms as much as 80% of total production in Greece.

Homer, in the “Odyssey”, refers to Olive Oil as “Golden Liquid”.

Extra-virgin olive oil comes from virgin oil production only, contains no more than 0.8% acidity, and has a superior taste.Virgin olive oil comes from virgin oil production only, has acidity less than 2%, and has a good taste. Pure olive oil is usually a blend of refined and virgin production oil. Olive oil is a blend of virgin and refined production oil, of no more than 1.5% acidity. It lacks a strong flavor. Olive pomace oil is often blended with some virgin oil. It is fit for consumption, but may not be described simply as olive oil. Lampante oil is not suitable for food; lampante comes from olive oil’s long-standing use in oil-burning lamps. Refined olive oil is the olive oil obtained from virgin olive oils by refining methods.
